Masala Chai

Masala Chai vegetarian recipe

Warm up with a proper cup of Masala Chai. This recipe has all the fragrant spices and creamy milk you want, great for any time of day.

Ingredients

  • 2 cups water
  • 1.5 cups milk
  • 4 teaspoons black tea leaves
  • 4 green cardamom pods
  • 2 cloves
  • 1 small cinnamon stick (about 2.5 cm)
  • 0.25 teaspoon grated fresh ginger
  • 4 teaspoons sugar (or to taste)

Instructions

  1. Gently crush 4 green cardamom pods and 2 cloves using a mortar and pestle or the back of a spoon. Break 1 small cinnamon stick into smaller pieces.
  2. In a saucepan, combine 2 cups water, the crushed cardamom pods, cloves, cinnamon stick pieces, and 0.25 teaspoon grated fresh ginger. Bring the mixture to a boil over medium heat.
  3. Once the water comes to a boil, add 4 teaspoons black tea leaves. Let it simmer for 1-2 minutes, allowing the tea to steep and the spices to infuse.
  4. Pour in 1.5 cups milk and add 4 teaspoons sugar. Stir well to combine. Bring the chai back to a rolling boil.
  5. Once it reaches a rolling boil, reduce the heat and let it simmer for another 2-3 minutes, stirring occasionally, until the chai has a rich color and strong aroma. Be careful not to let it boil over.
  6. Remove the saucepan from the heat. Pour the chai through a fine-mesh strainer into serving cups to remove the tea leaves and spices.
  7. Serve the Masala Chai hot and enjoy.
