Besan Ladoo vegetarian recipe

These Besan Ladoo are soft, sweet, and melt right in your mouth. You'll love the warm cardamom and nutty flavor.

Ingredients

  • 2 cups besan (gram flour)
  • 0.75 cup ghee
  • 1 cup powdered sugar
  • 0.5 teaspoon green cardamom powder
  • 2 tablespoons sliced almonds or pistachios (for garnish)

Instructions

  1. Measure out 2 cups besan (gram flour) and set aside.
  2. In a heavy-bottomed pan or kadai, melt 0.75 cup ghee over low heat.
  3. Once the ghee is melted, add the 2 cups besan to the pan. Stir continuously to combine the besan with the ghee.
  4. Continue to roast the besan on low to medium-low heat, stirring constantly, for about 20-25 minutes. The besan will gradually change color from pale yellow to a golden brown and release a fragrant aroma. Ensure it doesn't burn.
  5. Remove the pan from the heat and let the mixture cool down for about 10-15 minutes. It should still be warm but not too hot to handle.
  6. Add 1 cup powdered sugar and 0.5 teaspoon green cardamom powder to the warm besan mixture. Mix everything thoroughly with a spoon or your clean hands until well combined.
  7. Take small portions of the mixture, about 1 to 1.5 tablespoons each, and gently shape them into smooth, round ladoos. If the mixture is too dry to bind, you can add 1-2 teaspoons of melted ghee, one teaspoon at a time, until it comes together.
  8. Garnish each ladoo with a few slices of almonds or pistachios.
  9. Let the besan ladoos cool completely at room temperature for at least 30 minutes to firm up before serving. Store in an airtight container.
