Saffron Pistachio Cloud Dream vegetarian recipe

Saffron Pistachio Cloud Dream is a super easy dessert. It's a creamy, dreamy yogurt treat infused with saffron and crunchy pistachios. So good.

Ingredients

  • 2 cups plain full-fat yogurt
  • 0.25 cup honey
  • 0.25 teaspoon saffron threads
  • 2 tablespoons hot milk
  • 0.5 teaspoon ground cardamom
  • 0.5 cup shelled pistachios
  • 1 tablespoon rose water
  • 2 sprigs fresh mint

Instructions

  1. To make hung curd, line a fine-mesh sieve with two layers of cheesecloth. Place the sieve over a deep bowl. Add 2 cups plain full-fat yogurt into the cheesecloth. Cover gently and refrigerate for at least 4 hours, or preferably overnight, until most of the whey has drained and the yogurt is thick and creamy.
  2. While the yogurt is draining, prepare the saffron infusion. In a small bowl, steep 0.25 teaspoon saffron threads in 2 tablespoons hot milk for 10-15 minutes, allowing the saffron to release its color and aroma.
  3. Finely chop 0.25 cup shelled pistachios for layering and an additional 2 tablespoons for garnish. Set aside.
  4. Once the hung curd is ready, transfer it to a mixing bowl. Add 0.25 cup honey, the saffron-infused milk, 0.5 teaspoon ground cardamom, and 1 tablespoon rose water. Gently fold everything together until well combined and smooth.
  5. To assemble the dessert, take four individual serving glasses or bowls. Create a layer of the saffron-cardamom yogurt mixture at the bottom of each glass. Sprinkle a spoonful of the finely chopped pistachios over the yogurt layer. Repeat with another layer of yogurt, then another sprinkle of pistachios, until the glasses are full, ending with a yogurt layer.
  6. Cover the assembled desserts and chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld and the dessert to set properly.
  7. Before serving, garnish each Saffron Pistachio Cardamom Cloud Dream with 2 tablespoons of the remaining chopped pistachios and a small sprig of fresh mint. Serve chilled.
