Saffron Paneer Jewels vegetarian recipe

These Saffron Paneer Jewels are little bites of creamy, saffron-infused paneer. They're sweet, a little floral, and just melt in your mouth.

Ingredients

  • 200 grams paneer
  • 4 cups whole milk
  • 0.25 cup granulated sugar
  • 0.25 teaspoon saffron threads
  • 0.5 teaspoon green cardamom powder
  • 2 tablespoons sliced almonds
  • 2 tablespoons chopped pistachios

Instructions

  1. Cut 200 grams paneer into 1-inch cubes. Press the paneer cubes gently between your palms to ensure they are soft and absorb the milk mixture well.
  2. Take 4 cups whole milk in a heavy-bottomed pan and bring it to a boil over medium-high heat. Once it starts boiling, reduce the heat to low and let it simmer.
  3. While the milk is simmering, soak 0.25 teaspoon saffron threads in 2 tablespoons of warm milk (taken from the simmering milk) and set aside. This allows the saffron to release its color and flavor.
  4. Continue simmering the milk, stirring occasionally to prevent it from sticking to the bottom, until it reduces to about half its original quantity, which will take approximately 25-30 minutes.
  5. Add the soaked saffron milk mixture, 0.25 cup granulated sugar, and 0.5 teaspoon green cardamom powder to the reduced milk. Mix well.
  6. Gently add the paneer cubes to the saffron milk mixture. Let it simmer for another 5-7 minutes, allowing the paneer to absorb the flavors and become tender.
  7. Remove from heat and let it cool down to room temperature. The dessert will thicken further as it cools. Chill in the refrigerator for at least 2 hours before serving for best results.
  8. Serve the Saffron Paneer Jewels chilled in small bowls. Garnish each serving with 0.5 tablespoon sliced almonds and 0.5 tablespoon chopped pistachios.
