Berry Blast Swirl
Whip up a quick Berry Blast Swirl. It's got layers of tart berries and creamy yogurt. A sweet treat that feels light, even for dessert.
Ingredients
- 500 grams frozen mixed berries
- 400 grams plain Greek yogurt
- 4 tablespoons honey
- 2 teaspoons vanilla extract
- 0.25 cup water
- 4 fresh mint sprigs
Instructions
- Place 500 grams frozen mixed berries, 2 tablespoons honey, and 0.25 cup water into a small saucepan. Heat over medium heat, stirring occasionally, until the berries soften and release their juices, about 8-10 minutes.
- Remove the saucepan from heat. Use a potato masher or a fork to gently mash the berries into a coarse puree. For a smoother puree, you can blend it briefly with an immersion blender. Let the berry puree cool down completely, about 20-30 minutes.
- In a separate medium bowl, combine 400 grams plain Greek yogurt, 2 tablespoons honey, and 2 teaspoons vanilla extract. Stir well until all ingredients are thoroughly mixed and the yogurt is smooth and creamy.
- Divide the prepared yogurt mixture evenly among 4 individual serving glasses or bowls.
- Once the berry puree is cooled, spoon a generous amount over the yogurt in each glass. Using a spoon or a skewer, gently swirl the berry puree into the yogurt to create an attractive marbled effect.
- Chill the Berry Blast Swirls in the refrigerator for at least 30 minutes before serving to allow the flavors to meld and the dessert to set slightly.
- Before serving, garnish each Berry Blast Swirl with 1 fresh mint sprig. Serve immediately.
