Acai Bowl

Acai Bowl vegetarian recipe

Whip up a super-quick acai bowl that tastes like a treat but is good for you. It's thick, creamy, and ready whenever you are.

Ingredients

  • 4 frozen unsweetened acai packets (about 400g total)
  • 2 large ripe bananas, frozen and sliced
  • 1 cup frozen mixed berries
  • 1 cup unsweetened almond milk (or other plant-based milk)
  • 2 tablespoons agave nectar or maple syrup (optional, adjust to taste)
  • .5 cup granola, for topping
  • .25 cup shredded coconut, for topping
  • .25 cup sliced fresh fruit (e.g., banana, berries), for topping
  • 2 tablespoons chia seeds or hemp seeds, for topping

Instructions

  1. Thaw the acai packets under warm water for a few minutes to soften them slightly, making them easier to blend. Break them into smaller pieces if needed.
  2. In a high-speed blender, combine the thawed acai pieces, frozen sliced bananas, frozen mixed berries, unsweetened almond milk, and agave nectar (if using).
  3. Blend on low speed, using a tamper if your blender has one, to push the ingredients into the blades. Gradually increase the speed as the mixture starts to combine. Blend until completely smooth and thick, like a soft-serve ice cream. If it's too thick, add a tiny splash more almond milk, one tablespoon at a time, until it reaches the desired consistency.
  4. Divide the acai mixture evenly among 4 bowls.
  5. Garnish each bowl with your desired toppings: granola, shredded coconut, sliced fresh fruit, and chia seeds or hemp seeds.
  6. Serve immediately and enjoy!
