Emerald Enigma Smoothie

Emerald Enigma Smoothie vegetarian recipe

Whip up an Emerald Enigma Smoothie for a super quick breakfast. It's thick, creamy, and a great way to sneak in some greens without tasting them.

Ingredients

  • 2 cups fresh spinach
  • 2 medium bananas
  • 1.5 cups frozen mango chunks
  • 1 cup plain yogurt
  • 1 cup milk
  • 1 tablespoon honey
  • 0.5 teaspoon vanilla extract
  • 8 ice cubes

Instructions

  1. Wash 2 cups fresh spinach thoroughly under cold water to remove any dirt or debris. Set aside.
  2. Peel 2 medium bananas. You can break them into smaller pieces to facilitate blending.
  3. Add 2 cups spinach, 2 peeled bananas, 1.5 cups frozen mango chunks, 1 cup plain yogurt, 1 cup milk, 1 tablespoon honey, 0.5 teaspoon vanilla extract, and 8 ice cubes into a powerful blender.
  4. Blend all ingredients on high speed until completely smooth and creamy. If the smoothie is too thick, you can add 0.25 cup more milk until your desired consistency is reached.
  5. Taste the smoothie and adjust sweetness if desired, though the honey and fruits should provide ample natural sweetness. Pour the Emerald Enigma Smoothie evenly into four serving glasses.
  6. Serve immediately, garnishing each glass with a few fresh spinach leaves and a thin slice of banana for an appealing presentation.
