Mango Cake with Almond Flour
Mango cake made with almond flour is moist and tender, a great way to use up those ripe mangoes. It's naturally gluten-free and comes together easily.
Ingredients
- 2 large ripe mangoes
- 175 grams almond flour
- 60 grams granulated sugar
- 60 grams unsalted butter, softened
- 60 ml milk
- 1.5 teaspoons baking powder
- 1 teaspoon vanilla extract
- 0.25 teaspoon salt
- 2 tablespoons powdered sugar, for dusting
Instructions
- Preheat your oven to 180°C (350°F). Grease and flour a 20 cm (8-inch) round cake pan with 1 teaspoon butter and 1 tablespoon almond flour, ensuring it's evenly coated. Alternatively, line it with parchment paper for easy removal.
- Prepare the mangoes: wash 2 large ripe mangoes, peel them, and dice one mango into small 0.5 cm cubes. Slice the second mango thinly for decoration later.
- In a large bowl, cream together 59 grams softened unsalted butter and 60 grams granulated sugar using an electric mixer until the mixture is light and fluffy.
- Add 1 teaspoon vanilla extract to the creamed mixture and mix until just combined.
- In a separate medium bowl, combine 174 grams almond flour, 1.5 teaspoons baking powder, and 0.25 teaspoon salt. Whisk these dry ingredients together thoroughly.
- Gradually add the dry ingredient mixture to the wet ingredients, alternating with 60 ml milk. Begin and end with the dry ingredients. Mix on low speed until just combined, being careful not to overmix the batter.
- Gently fold in all of the diced mango cubes from one mango into the cake batter using a spatula.
- Pour the batter into the prepared cake pan and spread it evenly with the spatula.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center of the cake comes out clean. The cake should be golden brown on top.
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully invert it onto a wire rack to cool completely.
- Once the cake is completely cool, arrange the thinly sliced mango pieces on top for decoration. Dust the cake with 2 tablespoons powdered sugar before serving.
