Smoked Tomato & Feta Harvest
This baked smoked tomato and feta dish is so easy to prepare, perfect for a weeknight dinner or a light lunch. The tomatoes get sweet and jammy, while the feta turns creamy and flavorful.
Ingredients
- 500 grams cherry tomatoes, halved
- 200 grams block feta cheese, drained
- 4 cloves garlic, thinly sliced
- 0.5 teaspoon dried oregano
- 0.25 teaspoon red pepper flakes
- 4 tablespoons olive oil
- 0.25 teaspoon liquid smoke
- Salt to taste
- Freshly ground black pepper to taste
- 4 slices crusty bread, for serving
- 2 tablespoons fresh basil leaves, torn, for garnish
Instructions
- Preheat your oven to 200°C (390°F).
- In an oven-safe baking dish, combine 500 grams halved cherry tomatoes, 4 thinly sliced cloves garlic, 0.5 teaspoon dried oregano, and 0.25 teaspoon red pepper flakes. Drizzle with 3 tablespoons olive oil and 0.25 teaspoon liquid smoke. Add salt and freshly ground black pepper to taste. Gently toss everything to combine well.
- Place the 200 grams block feta cheese in the center of the baking dish, nestled among the tomatoes. Drizzle the remaining 1 tablespoon olive oil over the feta.
- Bake in the preheated oven for 25-30 minutes, or until the tomatoes are bursting and jammy, and the feta is soft, creamy, and lightly golden brown on top.
- Once baked, carefully remove the dish from the oven. Gently stir the tomatoes and feta together to create a creamy sauce. Serve immediately with 4 slices of crusty bread for dipping, and garnish with 2 tablespoons fresh torn basil leaves.
