Paneer Power Paratha
These paneer power parathas have a flavorful, protein-rich filling tucked inside soft whole wheat flatbread, perfect for a satisfying meal.
Ingredients
- 2 cups whole wheat flour
- 0.75 teaspoon salt
- 0.5 teaspoon carom seeds
- 0.5 cup warm water, plus more as needed
- 4 tablespoons ghee or vegetable oil, divided
- 250 grams paneer
- 1 medium onion
- 1 green chili
- 2 tablespoons fresh cilantro leaves
- 1 teaspoon ground coriander
- 0.5 teaspoon garam masala
- 0.25 teaspoon turmeric powder
- 0.5 teaspoon red chili powder
- 0.5 teaspoon amchur powder
- 0.25 teaspoon black pepper
Instructions
- In a large mixing bowl, combine 2 cups whole wheat flour, 0.5 teaspoon salt, and 0.5 teaspoon carom seeds. Gradually add 0.5 cup warm water, mixing until a dough forms. If needed, add a little more water, 1 tablespoon at a time, until the dough is soft and pliable. Knead for 5 minutes until smooth. Cover the dough with a damp cloth and let it rest for at least 15 minutes.
- While the dough rests, prepare the paneer filling. Grate 250 grams paneer into a medium bowl. Finely chop 1 medium onion and 1 green chili, and add them to the paneer. Chop 2 tablespoons fresh cilantro leaves and add to the bowl.
- Add 1 teaspoon ground coriander, 0.5 teaspoon garam masala, 0.25 teaspoon turmeric powder, 0.5 teaspoon red chili powder, 0.5 teaspoon amchur powder, 0.25 teaspoon black pepper, and 0.25 teaspoon salt to the paneer mixture. Mix everything gently with your hands until well combined.
- Divide the rested dough into 8 equal portions and roll them into smooth balls. Divide the paneer filling into 8 equal portions as well.
- Take one dough ball and flatten it slightly with your palm. Place one portion of the paneer filling in the center. Bring the edges of the dough together to enclose the filling, sealing it completely. Gently flatten the filled ball.
- Lightly dust your work surface with whole wheat flour. Roll out the filled dough ball into a round paratha, about 6-7 inches in diameter. Be gentle to prevent the filling from coming out.
- Heat a griddle or frying pan over medium-high heat. Once hot, place a rolled paratha on it. Cook for about 1 minute until small bubbles appear on the surface.
- Flip the paratha and spread 0.5 teaspoon ghee or vegetable oil evenly over the cooked side. Cook for another 1 minute, then flip again. Spread 0.5 teaspoon ghee or vegetable oil on the second side.
- Press gently with a spatula and cook until both sides are golden brown with some darker spots, and the paratha is cooked through. This should take about 2-3 minutes per paratha. Repeat with the remaining dough and filling to make 4 parathas.
- Serve the paneer power paratha hot, garnished with a pat of butter, a side of plain yogurt, and some pickled mango. Garnish each plate with a wedge of lemon on the side.
