Appam Stew
This Appam Stew brings together tender vegetables and creamy coconut milk for a comforting meal. It's a mild, soothing dish that pairs perfectly with fluffy appams.
Ingredients
- 200 grams carrots, peeled and diced into 1 cm cubes
- 150 grams potatoes, peeled and diced into 1 cm cubes
- 100 grams green beans, trimmed and cut into 2 cm pieces
- 0.5 cup frozen green peas
- 1 medium onion, thinly sliced
- 2 green chilies, slit lengthwise
- 1 inch ginger, thinly sliced
- 8-10 curry leaves
- 0.75 teaspoon whole black peppercorns
- 4 whole cloves
- 2 green cardamom pods
- 1 cinnamon stick, 1 inch piece
- 1.5 cups thin coconut milk
- 0.5 cup thick coconut milk
- 2 tablespoons coconut oil
- 0.5 teaspoon salt, or to taste
- 1 tablespoon fresh cilantro, chopped, for garnish
Instructions
- Wash and prepare all the vegetables. Peel and dice 200 grams carrots and 150 grams potatoes into 1 cm cubes. Trim and cut 100 grams green beans into 2 cm pieces. Thinly slice 1 medium onion and 1 inch ginger. Slit 2 green chilies lengthwise.
- Heat 2 tablespoons coconut oil in a large pot or deep pan over medium heat. Add 0.75 teaspoon whole black peppercorns, 4 whole cloves, 2 green cardamom pods, 1 cinnamon stick, and 8-10 curry leaves. Sauté for 30 seconds until fragrant.
- Add the thinly sliced 1 medium onion, 2 green chilies, and 1 inch thinly sliced ginger to the pot. Cook for 3-4 minutes until the onion turns translucent.
- Add the diced 200 grams carrots, 150 grams potatoes, and 100 grams green beans to the pot. Stir well and cook for 5 minutes, allowing the vegetables to slightly soften.
- Pour in 1.5 cups thin coconut milk and add 0.5 teaspoon salt. Bring the mixture to a gentle boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the vegetables are tender but not mushy.
- Stir in 0.5 cup frozen green peas and 0.5 cup thick coconut milk. Cook for another 2-3 minutes, stirring gently, until the stew is heated through and slightly thickened. Do not boil after adding thick coconut milk.
- Remove from heat. Transfer the Appam Stew to a serving bowl and garnish with 1 tablespoon fresh chopped cilantro. Serve hot with freshly made appams.
