Makai No Chevdo
Makai No Chevdo is a super quick Gujarati corn dish that's great for a snack or light meal. It's got a little kick and plenty of fresh corn goodness.
Ingredients
- 4 cups corn kernels (from about 6-8 medium corn cobs)
- 2 tablespoons ghee or vegetable oil
- 1.5 teaspoons cumin seeds
- 1 medium green chili, finely chopped
- 1 tablespoon fresh ginger, grated
- 0.25 teaspoon turmeric powder
- 0.5 teaspoon asafoetida (hing)
- 0.75 teaspoon red chili powder (adjust to taste)
- 0.5 teaspoon garam masala
- 1.5 teaspoons sugar
- 1.5 teaspoons salt (adjust to taste)
- 2 tablespoons fresh lemon juice
- 0.25 cup fresh coriander leaves, finely chopped
Instructions
- If using fresh corn cobs, remove 6-8 medium corn cobs from their husks and silk. Using a sharp knife, carefully cut 4 cups corn kernels off the cobs. You can also use good quality frozen corn kernels, thawed.
- In a large pan or heavy-bottomed pot, heat 2 tablespoons ghee or vegetable oil over medium heat.
- Once the ghee or oil is hot, add 1.5 teaspoons cumin seeds and let them splutter for about 10-15 seconds until fragrant.
- Add 1 medium finely chopped green chili and 1 tablespoon grated fresh ginger. Cook for 30 seconds, stirring constantly, until the raw smell disappears.
- Stir in 0.25 teaspoon turmeric powder and 0.5 teaspoon asafoetida (hing). Cook for 10 seconds, being careful not to burn the spices.
- Add the 4 cups corn kernels to the pan. Mix well and cook for 5-7 minutes, stirring occasionally, until the corn is slightly tender. If using fresh corn, it might take a bit longer.
- Add 0.75 teaspoon red chili powder, 0.5 teaspoon garam masala, 1.5 teaspoons sugar, and 1.5 teaspoons salt. Mix all the spices thoroughly with the corn.
- Cook for another 2-3 minutes, allowing the flavors to meld. Stir occasionally to prevent sticking.
- Remove the pan from heat and stir in 2 tablespoons fresh lemon juice and 0.25 cup finely chopped fresh coriander leaves. Mix well.
- Serve Makai No Chevdo hot, garnished with a little extra fresh coriander leaves if desired.
