These sprouted moong chaat bites are crunchy and tangy, making them a refreshing snack or light appetizer. They're a really good way to get some healthy sprouts into your diet.

Ingredients

  • 2 cups sprouted moong beans
  • 1 medium red onion
  • 1 medium tomato
  • 0.5 medium cucumber
  • 0.25 cup fresh cilantro leaves
  • 1 small green chili
  • 0.5 teaspoon black salt
  • 0.5 teaspoon roasted cumin powder
  • 0.25 teaspoon red chili powder
  • 0.25 teaspoon chaat masala
  • 2 tablespoons fresh lemon juice
  • 0.5 cup sev (crispy chickpea noodles)
  • 8 small papdis (fried flour crisps)

Instructions

  1. Rinse 2 cups sprouted moong beans thoroughly under cold water and drain well. Ensure they are fresh and firm.
  2. Finely dice 1 medium red onion, 1 medium tomato, and 0.5 medium cucumber. Roughly chop 0.25 cup fresh cilantro leaves and thinly slice 1 small green chili.
  3. In a large mixing bowl, combine the rinsed sprouted moong beans, diced red onion, diced tomato, diced cucumber, chopped fresh cilantro leaves, and sliced green chili.
  4. Add 0.5 teaspoon black salt, 0.5 teaspoon roasted cumin powder, 0.25 teaspoon red chili powder, and 0.25 teaspoon chaat masala to the mixture.
  5. Squeeze in 2 tablespoons fresh lemon juice. Mix all the ingredients gently with a spoon until evenly combined.
  6. Break 8 small papdis into smaller pieces. Divide the sprouted moong chaat mixture equally onto a serving platter or individual plates. Sprinkle 0.5 cup sev and the broken papdi pieces evenly over the chaat.
