Whipped Feta & Greens Tart - Chef's Special
This tart combines creamy whipped feta with fresh greens in a crispy pastry shell, making it a bright and satisfying meal. It's a great option for a light dinner or a fancy brunch.
Ingredients
- 230 grams puff pastry, 1 sheet
- 200 grams feta cheese, crumbled
- 60 grams plain yogurt
- 1 clove garlic, minced
- 0.5 teaspoon dried oregano
- 0.25 teaspoon black pepper, freshly ground
- 150 grams fresh spinach, washed and dried
- 1 medium zucchini, thinly sliced
- 0.5 medium red onion, thinly sliced
- 1 tablespoon olive oil
- 0.5 lemon, zest and juice
- 2 tablespoons fresh mint leaves, chopped
Instructions
- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Carefully unroll the 230 grams sheet of puff pastry onto the prepared baking sheet. Score a border about 1.5 cm (0.5 inch) from the edge of the pastry, being careful not to cut all the way through.
- In a food processor, combine 200 grams crumbled feta cheese, 60 grams plain yogurt, 1 minced clove garlic, 0.5 teaspoon dried oregano, and 0.25 teaspoon freshly ground black pepper. Process until smooth and creamy. If it's too thick, add a tiny bit more yogurt.
- Spread the whipped feta mixture evenly over the puff pastry, staying within the scored border.
- In a medium bowl, toss 150 grams fresh spinach, 1 thinly sliced medium zucchini, and 0.5 thinly sliced medium red onion with 1 tablespoon olive oil, the zest from 0.5 lemon, and the juice from 0.5 lemon.
- Arrange the tossed greens and vegetables evenly over the whipped feta base on the puff pastry.
- Bake for 20-25 minutes, or until the pastry is puffed and golden brown, and the vegetables are tender-crisp.
- Remove the tart from the oven. Let it cool for a few minutes before sprinkling with 2 tablespoons chopped fresh mint leaves. Slice and serve warm.
