Stuffed Bell Peppers

Stuffed Bell Peppers vegetarian recipe

Stuffed Bell Peppers bake up tender with a hearty rice and veggie filling. It's a colorful, satisfying dinner that's easier than you think.

Ingredients

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 2 medium carrots
  • 0.75 cup uncooked white rice
  • 1.5 cups vegetable broth
  • 0.5 cup frozen peas
  • 0.5 cup frozen corn
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon black pepper
  • 1 teaspoon salt
  • 0.5 cup tomato paste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit).
  2. Wash 4 large bell peppers. Carefully cut off the tops of the bell peppers and remove the seeds and membranes from the inside.
  3. In a large pot, bring 1.5 cups vegetable broth to a boil. Add 0.75 cup uncooked white rice, reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender. Once cooked, set aside.
  4. While the rice is cooking, heat 1 tablespoon olive oil in a large pan over medium heat. Finely dice 1 medium onion and add it to the pan. Cook for 5 minutes until softened.
  5. Finely chop 2 cloves garlic and add them to the pan with the onions. Cook for 1 minute until fragrant.
  6. Dice 2 medium carrots into small pieces and add them to the pan. Cook for 5-7 minutes until the carrots start to soften.
  7. Stir in 0.5 cup frozen peas and 0.5 cup frozen corn. Cook for 2-3 minutes.
  8. Add the cooked rice to the pan with the vegetables. Stir in 1 teaspoon dried oregano, 0.5 teaspoon dried basil, 0.25 teaspoon black pepper, and 1 teaspoon salt. Mix everything well.
  9. Stir in 0.5 cup tomato paste into the rice and vegetable mixture. Mix until everything is evenly coated.
  10. Place the hollowed bell peppers in a baking dish. Spoon the rice and vegetable mixture into each bell pepper, filling them generously.
  11. Sprinkle 1 cup shredded mozzarella cheese over the top of each stuffed bell pepper.
  12. Bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender and the cheese is melted and lightly golden brown.
  13. Remove from the oven and serve hot.
