Caprese Sandwich

Caprese Sandwich vegetarian recipe

Craving a quick, satisfying bite? This Caprese sandwich is packed with fresh mozzarella, ripe tomatoes, and fragrant basil, all on crusty bread. So simple, so good.

Ingredients

  • 8 slices of ciabatta bread or rustic Italian bread
  • 4 large ripe tomatoes
  • 340 grams fresh mozzarella cheese
  • 40 large fresh basil leaves
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Instructions

  1. To prepare the balsamic glaze, pour 2 tablespoons balsamic vinegar into a small saucepan. Bring to a simmer over medium-low heat and cook for 5-7 minutes, stirring occasionally, until the vinegar has reduced to a thick, syrupy consistency. Remove from heat and set aside to cool.
  2. Wash 4 large ripe tomatoes and 40 large fresh basil leaves. Slice the 4 large ripe tomatoes into 0.5 cm thick rounds. Slice 340 grams fresh mozzarella cheese into similar 0.5 cm thick rounds.
  3. Lay out 8 slices of ciabatta bread or rustic Italian bread. Drizzle 4 tablespoons olive oil evenly over one side of each bread slice.
  4. Season the olive oil-drizzled side of each bread slice with 0.25 teaspoon salt and 0.125 teaspoon black pepper, distributing the seasonings evenly across the 8 slices.
  5. On four of the bread slices, layer the sliced fresh mozzarella cheese, followed by the sliced ripe tomatoes, and then the fresh basil leaves. Distribute the ingredients evenly across the four bottom slices.
  6. Drizzle the prepared balsamic glaze over the basil leaves and other fillings on the four bottom bread slices.
  7. Top with the remaining four bread slices, olive oil-drizzled side down, to complete each sandwich. Gently press down on each sandwich.
  8. Serve immediately. If desired, cut each sandwich in half diagonally before serving. Garnish with a few extra fresh basil leaves on the side of each plate.
