Sweet Soy Noodles
Sweet Soy Noodles are your new weeknight go-to. Chewy noodles, tender carrots, and a savory-sweet sauce come together fast for a satisfying vegetarian dinner.
Ingredients
- 340 grams dried noodles (such as spaghetti, linguine, or ramen without seasoning packets)
- 2 tablespoons sesame oil
- 1 medium onion
- 2 cloves garlic
- 1 tablespoon fresh ginger
- 2 large carrots
- 1.5 cups broccoli florets
- 1 large red bell pepper
- 0.5 cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1.5 tablespoons honey
- 1 tablespoon cornstarch
- 0.25 cup water
- 0.25 cup chopped fresh green onions
- 1 teaspoon toasted sesame seeds
Instructions
- Bring a large pot of water to a boil. Once boiling, add 340 grams dried noodles and cook according to package directions until al dente. Drain the noodles, rinse with cold water to prevent sticking, and set aside.
- While the noodles cook, prepare the vegetables. Peel and finely dice 1 medium onion. Peel and finely chop 2 cloves garlic. Peel and grate or finely chop 1 tablespoon fresh ginger. Peel 2 large carrots and cut them into thin strips (julienne). Wash and cut 1.5 cups broccoli florets into small pieces. Wash and remove the seeds from 1 large red bell pepper, then cut it into thin strips.
- In a small bowl, prepare the sauce by whisking together 0.5 cup low-sodium soy sauce, 2 tablespoons rice vinegar, 1.5 tablespoons honey, and 1 tablespoon cornstarch. Set aside.
- Heat 2 tablespoons sesame oil in a large wok or a large non-stick pan over medium-high heat. Add the finely diced 1 medium onion and cook for 3-4 minutes until it softens. Add the finely chopped 2 cloves garlic and finely chopped 1 tablespoon fresh ginger and cook for another 1 minute until fragrant.
- Add the thin strips of 2 large carrots, 1.5 cups broccoli florets, and thin strips of 1 large red bell pepper to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.
- Give the prepared sauce mixture a quick stir, then pour it over the vegetables in the pan. Bring the sauce to a simmer, stirring constantly, until it thickens slightly. This should take about 1-2 minutes.
- Add the drained noodles to the pan with the vegetables and sauce. Toss everything together until the noodles are thoroughly coated in the sauce and heated through. If the sauce becomes too thick, you can add 0.25 cup water to reach your desired consistency.
- Serve the Sweet Soy Noodles immediately. Divide among four plates and garnish each serving with 0.25 cup chopped fresh green onions and 1 teaspoon toasted sesame seeds before serving.
