Soy-Braised Tofu & Greens

Soy-Braised Tofu & Greens vegetarian recipe

Soy-Braised Tofu and Greens is your new go-to for a quick, flavorful weeknight dinner. The tofu gets super tender, soaking up all that good ginger-garlic sauce.

Ingredients

  • 400 grams extra-firm tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic
  • 0.25 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 0.75 cup vegetable broth
  • 2 tablespoons olive oil
  • 2 medium heads bok choy
  • 2 cups fresh spinach
  • 0.25 cup sliced green onions
  • 1 teaspoon white sesame seeds

Instructions

  1. To prepare the tofu, drain 400 grams extra-firm tofu well. Press it between paper towels for at least 30 minutes to remove excess water. Once pressed, cut the tofu into 1-inch cubes.
  2. Prepare the braising sauce in a small bowl: combine 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon toasted sesame oil, 1 teaspoon freshly grated ginger, 2 cloves finely chopped garlic, 0.25 teaspoon red pepper flakes, 1 tablespoon cornstarch, and 0.75 cup vegetable broth. Whisk until the cornstarch is fully dissolved and set aside.
  3. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the tofu cubes in a single layer, being careful not to overcrowd the pan. Cook for 5-7 minutes, flipping occasionally, until all sides are golden brown and slightly crispy. Remove the tofu from the skillet and set aside.
  4. Add the remaining 1 tablespoon olive oil to the same skillet. Slice 2 medium heads bok choy crosswise, separating the white stalks from the green leaves. Add the white bok choy stalks to the skillet and cook for 2 minutes, until slightly softened.
  5. Add the green bok choy leaves and 2 cups fresh spinach to the skillet. Cook for 2-3 minutes, stirring occasionally, until the greens are wilted.
  6. Stir the prepared braising sauce mixture again, then pour it over the vegetables in the skillet. Bring to a simmer, stirring constantly, until the sauce thickens, which should take about 1-2 minutes.
  7. Return the cooked tofu to the skillet and gently toss to coat it evenly with the sauce and vegetables. Cook for another 1-2 minutes to allow the tofu to warm through and absorb some of the flavors.
  8. Transfer the Soy-Braised Tofu and Greens to serving plates. Garnish with 0.25 cup sliced green onions and 1 teaspoon white sesame seeds. Serve immediately, perhaps with a side of steamed brown rice or quinoa for a complete meal.
