Gulkand Rose Towers

Gulkand Rose Towers vegetarian recipe

These Gulkand Rose Towers are a simple, elegant dessert layered with creamy yogurt and sweet rose petal preserve. They're a lovely treat for after dinner or an afternoon pick-me-up.

Ingredients

  • 500 grams Greek yogurt
  • 4 tablespoons gulkand
  • 2 tablespoons powdered sugar
  • 1 teaspoon rose water
  • 20 grams pistachios
  • 8 fresh rose petals

Instructions

  1. In a medium mixing bowl, combine 500 grams Greek yogurt, 2 tablespoons powdered sugar, and 1 teaspoon rose water. Stir gently until all ingredients are well incorporated and the mixture is smooth.
  2. Coarsely chop 20 grams pistachios. Set aside a small amount for garnish.
  3. To assemble the towers, have four small serving glasses or ramekins ready. Spoon about 2 tablespoons of the sweetened yogurt mixture into the bottom of each glass. Spread it evenly.
  4. Next, add 1 tablespoon of gulkand over the yogurt layer in each glass. Spread it out gently.
  5. Sprinkle a portion of the chopped pistachios over the gulkand layer in each glass.
  6. Repeat the layers: another 2 tablespoons of sweetened yogurt, followed by 1 tablespoon of gulkand in each glass.
  7. Finish with a final layer of sweetened yogurt on top. Gently smooth the top surface.
  8. Refrigerate the Gulkand Rose Towers for at least 1 hour to allow them to chill and set.
  9. Before serving, take the chilled towers from the refrigerator. Garnish each tower with the remaining chopped pistachios and two fresh rose petals. Serve immediately.
