Ingredients

  • 225 grams rotini pasta
  • 2 tablespoons olive oil
  • 0.5 medium onion
  • 2 cloves garlic
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon dried basil
  • 400 grams crushed tomatoes
  • 0.5 cup vegetable broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup heavy cream
  • 0.75 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add 225 grams rotini pasta and cook according to package directions until al dente, about 8-10 minutes. Drain the pasta, reserving 0.5 cup of the pasta water, and set aside.
  2. While the pasta cooks, prepare the sauce. Peel 0.5 medium onion and chop it into small pieces. Peel 2 cloves garlic and finely chop them.
  3. Heat 2 tablespoons olive oil in a large skillet or pot over medium heat. Add the chopped 0.5 medium onion and cook for 5-7 minutes, stirring occasionally, until it softens and becomes translucent.
  4. Add the finely chopped 2 cloves garlic, 0.5 teaspoon dried oregano, and 0.25 teaspoon dried basil to the skillet. Cook for 1 minute more, stirring constantly, until fragrant.
  5. Pour in 400 grams crushed tomatoes and 0.5 cup vegetable broth. Stir in 0.5 teaspoon salt and 0.25 teaspoon black pepper. Bring the sauce to a gentle simmer, then reduce heat to low, cover, and let it cook for 10 minutes, allowing the flavors to blend.
  6. Remove the lid and stir in 0.5 cup heavy cream. Add the drained rotini pasta to the sauce and toss to combine, ensuring all the pasta is coated. If the sauce seems too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  7. Stir in 0.75 cup shredded mozzarella cheese and 0.25 cup grated Parmesan cheese until the cheeses are melted and creamy. Taste and adjust seasoning if needed.
  8. Finely chop 2 tablespoons fresh parsley. Divide the pasta among four serving plates and garnish each portion with fresh parsley. Serve immediately.
