Ingredients

  • 2 tablespoons ghee or vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon asafoetida (hing)
  • 10-12 fresh curry leaves
  • 2 medium onions, finely chopped
  • 2 medium green chilies, slit lengthwise
  • 1 teaspoon grated ginger
  • 0.5 teaspoon turmeric powder
  • 0.5 cup chopped carrots
  • 0.5 cup green peas (fresh or frozen)
  • 0.5 cup chopped bell pepper (any color)
  • 2 cups medium rava (semolina)
  • 4 cups hot water
  • 1.5 teaspoons salt, or to taste
  • 2 tablespoons fresh lemon juice
  • 0.25 cup fresh cilantro leaves, chopped

Instructions

  1. Heat 2 tablespoons ghee or vegetable oil in a large, heavy-bottomed pan or kadai over medium heat. Add 1 teaspoon mustard seeds and let them pop. Then add 1 teaspoon cumin seeds, 0.5 teaspoon asafoetida, and 10-12 fresh curry leaves. Cook for about 30 seconds until fragrant.
  2. Add 2 medium finely chopped onions and 2 medium green chilies, slit lengthwise. Cook, stirring occasionally, for 5-7 minutes until the onions turn soft and translucent.
  3. Stir in 1 teaspoon grated ginger and 0.5 teaspoon turmeric powder. Cook for 1 minute more until the raw smell of ginger disappears.
  4. Add 0.5 cup chopped carrots, 0.5 cup green peas, and 0.5 cup chopped bell pepper. Cook for 3-5 minutes, stirring, until the vegetables are slightly tender-crisp.
  5. Add 2 cups medium rava (semolina) to the pan. Roast the rava on medium-low heat for 8-10 minutes, stirring continuously, until it turns fragrant and slightly golden. Be careful not to burn it.
  6. Carefully pour in 4 cups hot water, stirring continuously to prevent lumps. Add 1.5 teaspoons salt. Mix well and cover the pan. Reduce the heat to low and cook for 5-7 minutes, or until the rava absorbs all the water and becomes fluffy.
  7. Turn off the heat and let the Masala Rava Delight sit, covered, for another 2-3 minutes. This allows it to steam and become even softer.
  8. Open the lid, fluff the rava gently with a fork, and stir in 2 tablespoons fresh lemon juice. Transfer the Masala Rava Delight to serving bowls and garnish with 0.25 cup fresh cilantro leaves, chopped. Serve hot.
