Aloo Matar vegetarian recipe

This Aloo Matar recipe brings tender potatoes and sweet peas together in a rich, spiced tomato sauce. It's a satisfying, easy weeknight Indian curry.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 medium tomato, pureed
  • 0.25 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1.5 teaspoons coriander powder
  • 0.5 teaspoon garam masala
  • 0.5 teaspoon salt, or to taste
  • 2 medium potatoes, peeled and cut into 1.5-inch cubes
  • 1.5 cups fresh or frozen green peas
  • 1 cup water
  • 2 tablespoons fresh coriander leaves, chopped, for garnish

Instructions

  1. Heat 2 tablespoons vegetable oil in a large pot or heavy-bottomed pan over medium heat.
  2. Add 1 teaspoon cumin seeds to the hot oil and let them sizzle until fragrant, about 30 seconds.
  3. Add 1 medium finely chopped onion and cook until it turns golden brown, stirring occasionally, about 5-7 minutes.
  4. Stir in 1 tablespoon ginger paste and 1 tablespoon garlic paste. Cook for 1 minute until their raw smell disappears.
  5. Add 1 medium pureed tomato to the pot and cook, stirring frequently, until the oil starts to separate from the mixture, about 5 minutes.
  6. Reduce the heat to low. Add 0.25 teaspoon turmeric powder, 1 teaspoon red chili powder, 1.5 teaspoons coriander powder, and 0.5 teaspoon garam masala. Stir well and cook for 1 minute, adding a splash of water if the spices stick to the bottom.
  7. Add 2 medium potatoes, peeled and cut into 1.5-inch cubes, and 1.5 cups fresh or frozen green peas to the pot. Mix everything well to coat the vegetables with the spice mixture.
  8. Pour in 1 cup water and add 0.5 teaspoon salt. Bring the mixture to a simmer.
  9. Cover the pot and cook on medium-low heat for 15-20 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.
  10. Once the potatoes are cooked and the gravy has thickened to your desired consistency, remove from heat.
  11. Garnish with 2 tablespoons fresh chopped coriander leaves before serving hot.
