Crispy Aloo Tikki are spiced potato patties. They're quick to fry up for a snack or light meal and everyone always loves them.

Ingredients

  • 500 grams potatoes
  • 2 green chilies
  • 20 grams fresh ginger
  • 0.25 cup fresh coriander leaves
  • 0.75 teaspoon cumin powder
  • 0.75 teaspoon coriander powder
  • 0.5 teaspoon garam masala
  • 0.5 teaspoon red chili powder
  • 0.75 teaspoon salt
  • 0.5 cup breadcrumbs
  • 0.5 cup vegetable oil

Instructions

  1. Wash and peel the 500 grams potatoes. Cut them into quarters.
  2. Place the quartered potatoes in a pot and add enough water to cover them. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes. Drain the water completely.
  3. While the potatoes are still warm, mash them thoroughly with a potato masher or fork until smooth. Make sure there are no lumps.
  4. Finely chop the 2 green chilies and 20 grams fresh ginger.
  5. Finely chop the 0.25 cup fresh coriander leaves.
  6. Add the finely chopped green chilies, finely chopped ginger, finely chopped fresh coriander leaves, 0.75 teaspoon cumin powder, 0.75 teaspoon coriander powder, 0.5 teaspoon garam masala, 0.5 teaspoon red chili powder, and 0.75 teaspoon salt to the mashed potatoes.
  7. Mix all the ingredients together thoroughly until well combined. The mixture should be firm enough to form patties.
  8. Divide the potato mixture into 8 equal portions. Take each portion and flatten it into a round or oval patty, about 0.5 inch thick.
  9. Spread 0.5 cup breadcrumbs on a shallow plate. Gently press each potato patty into the breadcrumbs, coating both sides evenly.
  10. Heat 0.5 cup vegetable oil in a large frying pan or skillet over medium heat.
  11. Once the oil is hot, carefully place the Aloo Tikki into the pan, ensuring not to overcrowd it. You may need to cook them in batches.
  12. Fry the Aloo Tikki for 3-4 minutes on each side, or until they are golden brown and crispy.
  13. Remove the fried Aloo Tikki from the pan and place them on a plate lined with paper towels to drain excess oil.
  14. Serve the hot Aloo Tikki immediately with your favorite chutney or ketchup.
