Aloo Masala Grilled Sandwich
Aloo Masala Grilled Sandwich: Indian-spiced potatoes squished between bread and grilled until crispy. It's a quick lunch that hits the spot.
Ingredients
- 4 large potatoes
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 0.5 teaspoon cumin seeds
- 0.25 teaspoon asafoetida
- 1 green chili
- 0.5 medium onion
- 0.5 medium tomato
- 0.5 teaspoon turmeric powder
- 0.5 teaspoon red chili powder
- 0.75 teaspoon salt
- 0.5 teaspoon garam masala
- 2 tablespoons fresh coriander leaves
- 8 slices bread
- 4 tablespoons butter
Instructions
- Wash 4 large potatoes thoroughly. Place them in a pot, cover with water, and boil them until they are tender when poked with a fork, about 15-20 minutes. Once cooked, drain the water, let them cool slightly, then peel off their skins. Mash the potatoes coarsely with a fork or potato masher.
- Finely chop 1 green chili, 0.5 medium onion, and 0.5 medium tomato. Finely chop 2 tablespoons fresh coriander leaves. Keep these prepared ingredients aside.
- Heat 2 tablespoons vegetable oil in a pan over medium heat. Once hot, add 1 teaspoon mustard seeds and 0.5 teaspoon cumin seeds. Let them splutter.
- Add 0.25 teaspoon asafoetida, the chopped 0.5 medium onion, and 1 green chili to the pan. Sauté for 3-4 minutes until the onion turns translucent.
- Add the finely chopped 0.5 medium tomato to the pan and cook for another 2-3 minutes until it softens.
- Stir in 0.5 teaspoon turmeric powder, 0.5 teaspoon red chili powder, 0.75 teaspoon salt, and 0.5 teaspoon garam masala. Mix well and cook for 1 minute.
- Add the mashed 4 large potatoes to the spice mixture. Mix everything thoroughly, making sure the spices are evenly distributed. Cook for 2-3 minutes, stirring occasionally. Turn off the heat and stir in the chopped 2 tablespoons fresh coriander leaves.
- Preheat your grill pan or sandwich maker. Take 8 slices bread and spread 0.5 tablespoons of the potato filling evenly over 4 of the bread slices. Place the remaining 4 bread slices on top, forming 4 sandwiches.
- Generously butter the outer sides of each sandwich with 1 tablespoon butter total (0.25 tablespoons per sandwich). Place the buttered sandwiches on the preheated grill. Grill for 3-5 minutes on each side, or until golden brown and crispy.
- Remove the grilled Aloo Masala sandwiches from the grill. Cut each sandwich diagonally into halves and serve hot with your favorite chutney or ketchup.
