Spinach Artichoke Pasta
Whip up this Spinach Artichoke Pasta for dinner tonight. It comes together fast and has that creamy, dreamy texture everyone loves. Totally meatless, totally satisfying.
Ingredients
- 300 grams fettuccine or penne pasta
- 2 tablespoons olive oil
- 2 cloves garlic, finely chopped
- 0.5 medium yellow onion, finely diced
- 250 grams frozen chopped spinach, thawed and squeezed dry
- 200 grams canned artichoke hearts, drained and roughly chopped
- 0.75 cup vegetable broth
- 0.5 cup milk
- 100 grams cream cheese, softened
- 0.25 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons fresh lemon juice
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil. Add 300 grams fettuccine or penne pasta and cook according to package directions until al dente. Reserve 0.5 cup of the pasta cooking water before draining the pasta.
- While the pasta is cooking, heat 2 tablespoons olive oil in a large skillet or pot over medium heat. Add 0.5 medium yellow onion, finely diced, and cook until softened, about 3-4 minutes.
- Add 2 cloves garlic, finely chopped, to the skillet and cook for 1 minute more until fragrant, being careful not to burn the garlic.
- Stir in 250 grams frozen chopped spinach, thawed and squeezed dry, and 200 grams canned artichoke hearts, drained and roughly chopped. Cook for 2-3 minutes, stirring occasionally, until the spinach is fully heated through.
- Pour in 0.75 cup vegetable broth and 0.5 cup milk. Bring the mixture to a gentle simmer.
- Reduce the heat to low and add 100 grams cream cheese, softened, and 0.25 cup grated Parmesan cheese. Stir continuously until the cheeses are melted and the sauce is smooth and creamy.
- Stir in 2 tablespoons fresh lemon juice, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Taste and adjust seasonings as needed.
- Add the drained pasta to the skillet with the sauce. Toss well to coat the pasta evenly. If the sauce seems too thick, add some of the reserved pasta cooking water, 1-2 tablespoons at a time, until it reaches your desired consistency.
- Serve immediately, garnished with additional grated Parmesan cheese if desired.
