Bruschetta
Whip up classic bruschetta for an easy appetizer. Toasted bread, fresh tomatoes, and basil make for a bright, simple bite.
Ingredients
- 1 baguette
- 2 large ripe tomatoes
- 4 cloves garlic
- 0.25 cup fresh basil leaves
- 4 tablespoons olive oil
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
Instructions
- Preheat your oven to 200 degrees Celsius (390 degrees Fahrenheit).
- Cut 1 baguette into 12 slices, approximately 1.5 cm (0.6 inches) thick. Arrange the slices on a baking sheet.
- Drizzle 2 tablespoons olive oil over the baguette slices and toast them in the preheated oven for 8-10 minutes, or until golden brown and crisp. Keep an eye on them to prevent burning.
- While the bread is toasting, prepare the tomato topping. Wash and finely dice 2 large ripe tomatoes into small, even pieces.
- Wash and thinly slice 0.25 cup fresh basil leaves.
- Peel 4 cloves garlic. Once the toasted bread comes out of the oven, immediately rub each warm slice vigorously with 1 clove of garlic. This infuses the bread with a wonderful garlic flavor.
- In a medium bowl, combine the diced tomatoes, sliced basil, 0.25 teaspoon salt, and 0.125 teaspoon black pepper. Gently mix everything together.
- Evenly spoon the tomato mixture over each toasted and garlic-rubbed baguette slice.
- Drizzle the remaining 2 tablespoons olive oil, basil leaves and shredded cheese over the assembled bruschetta just before serving.
