Mung Bean Pancakes

Mung Bean Pancakes vegetarian recipe

These savory mung bean pancakes are super easy to whip up. Just soak some beans, blend 'em with a few spices, and cook 'em for a quick, satisfying meal any time of day.

Ingredients

  • 1 cup whole green mung beans
  • 0.75 cup water (for grinding)
  • 0.5 medium onion
  • 1 inch ginger
  • 1 green chili
  • 0.5 teaspoon cumin seeds
  • 0.25 teaspoon turmeric powder
  • 0.5 teaspoon salt
  • 2 tablespoons fresh cilantro leaves
  • 2 tablespoons cooking oil

Instructions

  1. Wash 1 cup whole green mung beans thoroughly under running water. Place the washed mung beans in a large bowl, cover with plenty of water, and soak for at least 4 hours or overnight. After soaking, drain the water completely.
  2. Peel and roughly chop 0.5 medium onion. Peel and roughly chop 1 inch ginger. Remove the stem from 1 green chili (adjust to your spice preference). Wash and roughly chop 2 tablespoons fresh cilantro leaves.
  3. Transfer the soaked and drained mung beans to a blender. Add the chopped 0.5 medium onion, chopped 1 inch ginger, chopped 1 green chili, 0.5 teaspoon cumin seeds, 0.25 teaspoon turmeric powder, and 0.5 teaspoon salt. Add 0.75 cup water to the blender.
  4. Blend the mixture until it forms a smooth, thick batter, similar to pancake batter consistency. If the batter is too thick, add a tablespoon or two more water, but ensure it's not too runny.
  5. Heat 0.5 tablespoon cooking oil in a non-stick pan or griddle over medium heat. Once hot, pour about 0.5 cup of the mung bean batter onto the pan and spread it gently with the back of a spoon to form a round pancake, about 6-7 inches in diameter.
  6. Cook for 2-3 minutes until the edges start to crisp and bubbles appear on the surface. Drizzle 0.5 teaspoon of cooking oil around the edges and on top of the pancake. Flip the pancake and cook for another 2-3 minutes on the other side until golden brown and cooked through.
  7. Repeat the process with the remaining batter and cooking oil to make the other three pancakes. You should yield 4 pancakes from this recipe.
  8. Serve the hot Mung Bean Pancakes immediately. Garnish each pancake with a sprinkle of 0.25 teaspoon fresh cilantro leaves.
