Cozy Autumn Greens
This dish of wilted greens with warming spices is a comforting side, perfect for a cozy autumn evening.
Ingredients
- 600 grams fresh spinach
- 1 tablespoon ghee
- 0.5 teaspoon cumin seeds
- 1 medium onion
- 2 cloves garlic
- 1 small piece ginger
- 0.25 teaspoon turmeric powder
- 0.5 teaspoon coriander powder
- 0.25 teaspoon red chili powder
- 0.5 teaspoon garam masala
- 0.5 teaspoon salt
- 2 tablespoons fresh cilantro leaves
Instructions
- Wash 600 grams fresh spinach thoroughly under running water. Roughly chop the spinach and set aside in a colander to drain any excess water.
- Peel and finely dice 1 medium onion. Peel and finely chop 2 cloves garlic. Peel and grate 1 small piece ginger.
- Heat 1 tablespoon ghee in a large pot or deep pan over medium heat.
- Add 0.5 teaspoon cumin seeds to the hot ghee. Let them splutter for about 10-15 seconds until fragrant.
- Add the finely diced 1 medium onion to the pot and cook for 5-7 minutes, stirring occasionally, until the onion turns soft and light golden brown.
- Stir in the finely chopped 2 cloves garlic and grated 1 small piece ginger. Cook for another 1-2 minutes until their raw smell disappears.
- Add 0.25 teaspoon turmeric powder, 0.5 teaspoon coriander powder, and 0.25 teaspoon red chili powder. Mix well and cook for 30 seconds, stirring continuously. If the spices start to stick, add a splash of water, about 1-2 tablespoons.
- Add all of the chopped 600 grams fresh spinach to the pot. It will look like a lot, but it will wilt down significantly. Cook, stirring occasionally, for 5-8 minutes until the spinach has completely wilted and softened.
- Stir in 0.5 teaspoon garam masala and 0.5 teaspoon salt. Mix everything together well. Taste and adjust seasoning if needed.
- Transfer the Cozy Autumn Greens to a serving bowl. Garnish with 2 tablespoons fresh cilantro leaves. Serve hot with roti, naan, or rice.
