Ingredients
- 4 medium potatoes
- 0.25 cup green peas, fresh or frozen
- 2 tablespoons cornstarch
- 0.5 teaspoon cumin powder
- 0.5 teaspoon coriander powder
- 0.25 teaspoon red chili powder
- 0.5 teaspoon salt
- 2 tablespoons vegetable oil, for pan-frying
- 1 cup chickpeas, canned, drained and rinsed
- 0.5 medium red onion, finely chopped
- 1 medium tomato, finely chopped
- 0.5 medium cucumber, finely chopped
- 0.25 cup fresh cilantro, finely chopped
- 1 cup plain yogurt
- 0.25 teaspoon black salt (kala namak)
- 0.25 teaspoon roasted cumin powder
- 0.25 cup tamarind chutney
- 0.25 cup green chutney
- 0.5 cup sev (crispy chickpea flour noodles)
- 0.25 cup pomegranate seeds
Instructions
- Wash 4 medium potatoes thoroughly. Place them in a pot, cover with water, and boil for about 15-20 minutes until they are fork-tender. Drain the water and let them cool enough to handle.
- While the potatoes cool, cook 0.25 cup green peas. If using fresh, boil them for 3-5 minutes. If frozen, simply thaw them or cook briefly. Set aside.
- Peel the cooled potatoes and mash them well in a large bowl. Make sure there are no large lumps.
- Add the cooked 0.25 cup green peas, 2 tablespoons cornstarch, 0.5 teaspoon cumin powder, 0.5 teaspoon coriander powder, 0.25 teaspoon red chili powder, and 0.5 teaspoon salt to the mashed potatoes. Mix everything thoroughly to form a dough-like mixture.
- Divide the potato mixture into 8 equal portions. Shape each portion into a flat, round patty, about 0.5 inches thick. You can use your hands to press them firmly.
- Heat 2 tablespoons vegetable oil in a large non-stick pan over medium heat. Carefully place the potato patties in the pan, making sure not to overcrowd it. Cook for 3-4 minutes on each side until they are golden brown and crispy.
- While the patties cook, prepare the yogurt. In a small bowl, whisk 1 cup plain yogurt until smooth. Add 0.25 teaspoon black salt and 0.25 teaspoon roasted cumin powder and mix well.
- Also, prepare the fresh toppings. Finely chop 0.5 medium red onion, 1 medium tomato, 0.5 medium cucumber, and 0.25 cup fresh cilantro. In a bowl, combine the chopped onion, tomato, cucumber, 0.25 cup fresh cilantro, and 1 cup drained and rinsed chickpeas. Mix gently.
- To assemble the chaat towers, place one crispy potato patty on a serving plate. Top it with a spoonful of the chickpea and vegetable mixture. Drizzle generously with the seasoned 0.25 cup plain yogurt, 0.25 cup tamarind chutney, and 0.25 cup green chutney.
- Place another potato patty on top of the first layer and repeat the topping process: chickpea mixture, yogurt, tamarind chutney, and green chutney. You will build 4 towers, each with 2 patties.
- Finish each tower with a sprinkle of 0.5 cup sev and 0.25 cup pomegranate seeds. Serve immediately.
