Gareebon ki Biryani
Gareebon ki Biryani is a quick Indian rice dish that's great for busy weeknights. It's packed with veggies and feels like a warm hug in a bowl.
Ingredients
- 1.5 cups Basmati rice
- 3 tablespoons ghee
- 1 teaspoon cumin seeds
- 1 large onion
- 2 medium potatoes
- 1 medium carrot
- 0.5 cup green peas
- 1 tomato
- 1 tablespoon ginger-garlic paste
- 0.5 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 0.5 teaspoon Garam Masala
- 0.25 cup yogurt
- 3 cups water
- 1 teaspoon salt
- 4 whole green chilies
- 0.25 cup fresh cilantro leaves
- 0.5 lemon
Instructions
- Wash 1.5 cups Basmati rice thoroughly under running water until the water runs clear. Soak the rice in 4 cups of water for at least 30 minutes. This helps the rice cook evenly and remain fluffy.
- Peel and finely slice 1 large onion. Peel and cut 2 medium potatoes into 1-inch cubes. Peel and cut 1 medium carrot into 0.5-inch pieces. Cut 1 tomato into small cubes. Halve 4 whole green chilies lengthwise.
- Heat 3 tablespoons ghee in a large pot or pressure cooker over medium heat. Once the ghee is hot, add 1 teaspoon cumin seeds and let them splutter for a few seconds.
- Add the finely sliced 1 large onion to the pot and cook, stirring occasionally, until it turns golden brown, about 7-8 minutes.
- Add 1 tablespoon ginger-garlic paste and cook for 1 minute until the raw smell disappears.
- Add the cubed 2 medium potatoes and 1 medium carrot pieces to the pot. Stir well and cook for 5 minutes, allowing them to soften slightly.
- Stir in 0.5 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon coriander powder, and 0.5 teaspoon Garam Masala. Mix thoroughly, ensuring the spices coat the vegetables, and cook for 1 minute.
- Add the cubed 1 tomato and 0.5 cup green peas. Cook for another 3-4 minutes until the tomatoes soften and blend with the spices.
- Take 0.25 cup yogurt and whisk it until smooth. Add the whisked yogurt to the pot and mix quickly to prevent it from curdling. Cook for 2 minutes.
- Drain the soaked 1.5 cups Basmati rice and add it to the vegetable mixture in the pot. Gently mix everything together without breaking the rice grains.
- Pour in 3 cups water and add 1 teaspoon salt. Place the halved 4 whole green chilies on top. Stir gently to combine.
- If using a pressure cooker, close the lid and cook for 2 whistles on high heat (approximately 6-8 minutes on Instant Pot, set to high pressure with natural release). If using a regular pot, bring to a boil, then reduce heat to low, cover the pot tightly, and let it simmer for 15-20 minutes, or until all the water is absorbed and the rice is cooked through. Do not open the lid during cooking.
- Once cooked, let the biryani rest for 5 minutes (if using a pressure cooker, let the pressure release naturally). Gently fluff the rice with a fork.
- Transfer the Gareebon ki Biryani to a serving platter. Garnish with 0.25 cup freshly chopped cilantro leaves and a squeeze of juice from 0.5 lemon. Serve hot with raita or plain yogurt.
